Brookies Recipe (Cookie Brownies)

Ingredients
  

  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup  granulated sugar
  • 2 large  eggs
  • 1 teaspoon  vanilla extract
  • ½ cup  all-purpose flour
  • cup  cocoa powder
  • ¼ teaspoon  salt
For the cookie layer:
  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup  brown sugar
  • ¼  cup  granulated sugar
  • 1 large  egg
  • 1 teaspoon  vanilla extra
  • 1 ¼ cups  all-purpose flour
  • ½ teaspoon  baking soda
  • ¼  teaspoon  salt
  • ½ cup  chocolate chips

Method
 

  1. In a medium bowl, whisk together melted butter and sugar until glossy. Add eggs and vanilla and whisk until smooth.
  2. Sift in the flour, cocoa powder, and salt, then stir with a spatula just until combined.
  3. Spread the brownie batter evenly into the prepared pan 
Make the Cookie Dough
  1. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the egg and vanilla, mixing until combined. Then add the flour, baking soda, and salt, stirring until the dough just comes together.
  3. Fold in the chocolate chips 
Layer and Bake
  1. Drop spoonfuls of cookie dough over the brownie batter. It doesn’t have to be perfect — the two layers will blend slightly as they bake, giving you that marbled brookie look.
  2. Bake for 28–32 minutes, depending on how gooey you like them.

Notes

  • Use room temperature ingredients. It helps everything blend smoothly.
  • Don’t overbake. The center should look just set — they’ll continue to firm up as they cool.
  • Cool completely. Cutting too soon can make them messy, but warm slices with ice cream are totally worth it.
  • Mix by hand. Overmixing can make the cookie layer tough.
  • Try a sprinkle of sea salt. It adds that extra flavor pop on top.
