Cannoli Dip

Ingredients
  

  • 1 cup  ricotta cheese (drained if very wet)
  • 1 cup  mascarpone cheese (room temperature)
  • ½ cup  powdered sugar (plus more to taste)
  • 1 teaspoon  vanilla extract
  • ½ teaspoon  almond extract optional
  • ½ cup  mini chocolate chips
  • Pinch of salt

Method
 

  1. In a large mixing bowl, combine the drained ricotta and mascarpone.
  2. Beat them together with a hand mixer or whisk until smooth and creamy — about 1–2 minutes.
  3. dd the powdered sugar, vanilla extract, and a pinch of salt. Mix again until everything is fully incorporated.
  4. Taste and adjust — if you prefer it a bit sweeter, add an extra tablespoon or two of powdered sugar.
  5. Gently fold in the mini chocolate chips using a spatula.
  6. Transfer the dip to a serving bowl, cover, and refrigerate for at least 30 minutes before serving.
  7. When you’re ready to serve, sprinkle extra chocolate chips on top, or add crushed waffle cone pieces for a little crunch.

Notes

Here’s where the fun starts — the dip is just the beginning. Serve it with:
  • Waffle cone pieces or broken sugar cones
  • Vanilla wafers or graham crackers
  • Biscotti or ladyfingers
  • Fresh fruit like strawberries or sliced apples
  • Small pieces of pound cake or shortbread
