Method
- In a large mixing bowl, combine the drained ricotta and mascarpone.
- Beat them together with a hand mixer or whisk until smooth and creamy — about 1–2 minutes.
- dd the powdered sugar, vanilla extract, and a pinch of salt. Mix again until everything is fully incorporated.
- Taste and adjust — if you prefer it a bit sweeter, add an extra tablespoon or two of powdered sugar.
- Gently fold in the mini chocolate chips using a spatula.
- Transfer the dip to a serving bowl, cover, and refrigerate for at least 30 minutes before serving.
- When you’re ready to serve, sprinkle extra chocolate chips on top, or add crushed waffle cone pieces for a little crunch.
