Method
- Stir the peanut butter and sugar (or coconut sugar) together in a bowl until smooth.
- Add the egg and mix until everything is well combined.
- Scoop out tablespoon-sized portions of dough and roll them into balls.
- Place them on a parchment-lined baking sheet about 2 inches apart.
- Bake in a preheated oven at 350°F for 10–12 minutes.
- Let them rest on the baking sheet for about 5 minutes before transferring to a wire rack.
