Skillet Cookie Cake

Ingredients
  

  • 1 cup (2 sticks unsalted butter, melted
  • 1 cup  light brown sugar, packed
  • ½ cup  granulated sugar
  • 2 large eggs
  • 2 teaspoons  vanilla extract
  • 2 ½ cups  all-purpose flour
  • 1 teaspoon  baking soda
  • ½ teaspoon  salt
  • 1 ½ cups  chocolate chips or chunks

Method
 

  1. Start by melting the butter in your cast-iron skillet or a small saucepan.
  2. In a large bowl, whisk together the melted butter, brown sugar, and white sugar until smooth and glossy. Add the eggs one at a time, whisking well after each addition. 
  3. Then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Slowly fold the dry ingredients into the wet mixture using a spatula.
  5. Once it comes together, fold in the chocolate chips
  6. Lightly grease a 10-inch cast-iron skillet or oven-safe pan with butter. Spread the cookie dough evenly, pressing it into the edges so it bakes evenly.
  7. Bake at 350°F (175°C) for 20–25 minutes.

Notes

  • Use a cast-iron skillet. It gives the best texture and golden color.
  • Don’t overmix. Stop stirring once the flour disappears.
  • Check early. Every oven is different — it’s better slightly under than overbaked.
  • Cool briefly. Ten minutes is just enough for the cookie to set but still be warm inside.
  • Reheat smart. A few seconds in the microwave brings it right back to life.
